As some of you may know, my trusty assistant Cruella and I like to get into trouble on the farm! But when that happens that means no pie! Boo! So we decided to join forces and put our talents together in our Tack Room Kitchen. We love pie and all things like holiday desserts and my Grandma gave me so many wonderful and yummy recipes. So from her kitchen to mine and yours here is a great recipe for Pecan Pie! A tradition in Southern cuisine and a welcome addition to any holiday table! We hope you enjoy it!
1 1/2 Cups Flour
1/2 teaspoon baking powder
1 teaspoon salt
1/2 cup shortening
1/4 cup cold water
Sift dry ingredients together. Flake shortening in. Mix with water and chill. Take one-half of dough and roll and put in pie pan. Fill with this filling:
1/2 cup sugar
1 tablespoon butter
1/2 cup dark corn syrup
1/2 cup light corn syrup
1/2 cup pecan nut meats, broken
Beat sugar and butter together. Add beaten egg, syrup, salt and nut meats. Bake in oven 420 degrees for 15 minutes. Reduce heat to 325 degrees for approximately 30 minutes more.
The pie crust recipe above makes enough crust for 2 single crust pies or one double crust pie.
