I hope you’re all getting ready for Christmas! I have been very busy too. One of my most favorite things about the holidays is the yummy desserts. One of our family favorites has been my Grandma’s Fruit cake. This is a avery old recipe from many years ago and perhaps one that is not found today, but that’s what makes it so special and a little unusual too!
So here is my family favorite recipe for Holiday Fruitcake!
1 lb of side Pork (ground)
6 cups flour
4 cups of sugar
1 lb dark raisins
1 lb white raisins
1 lb currants (optional)
1 lb nut meats chopped (save some halves for decoration)
All types of candied fruit
1 teaspoon cloves
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
Pour 1 quart boiling water over fresh side pork, add two cups flour and mix well. Add sugar and egg yolks well beaten then add the remainder of the flour and spices. Next, stir and fold this into the well beaten egg whites, fruit is to be added last.
Flour all raisins, nuts and candied fruit so they will not sink to the bottom of the cake, they will then be distributed more evenly through the cake.
Line baking tins with waxed paper greased. Bake at 300 degree for 3 to 4 hours.
IMPORTANT! Start the cakes in a cold oven! After they are baked, let stand in pan until they are cooled.
