Hee Hee! It’s Time to Ring In The New Year 2015! My Grandma loved to make this recipe for Christmas and she also did it for New Year’s Day as a complement to her wonderful holiday meals. We would often watch her make it in the afternoon and then enjoy devouring it after dinner in the evenings! It’s very tasty and reminds of all the happy times during the holidays with our family! We here in the barn hope you will try it for that special occasion with your family and friends and enjoy it!
crust: Mix like Pie Dough
4 cups of flour
3/4 cups of white sugar
1 tsp of salt
1 cup of shortening
1 cup of sour cream 1/2 pint
2 tsp of vanilla
2 tsp of baking powder
Knead well and chill for 1/2 hr.
1 and 1/2 cans of crushed pineapple
2 tablespoons of cornstarch (mixed in pineapple juice)
3/4 cups of brown sugar
1/4 of white sugar
Cook on medium heat until thickened and let cool.
Work dough onto well greased cookie sheet.
Spread filling on top of crust and add strips cut from saved dough.
Sprinkle with chopped walnuts.
Brush with well beaten egg.
Bake at 350 degrees until lightly brown.
