Turkey Loaf!

Hi Friends!

It’s after the holidays and we are now a month or so into the new year. But lately we have had a taste for some turkey. Luckily Grandma has a great recipe for turkey loaf! It’s lean and tastes great and make a great compliment to fresh veggies on the side!

4 Cups cooked turkey
1 cup finely chopped celery
1 cup soft bread crumbs
2 teaspoons minced parsley
2 teaspoons salt
4 eggs
2 cups meat or vegetable stock
2 teaspoons butter

Cut turkey into rather large pieces. Place in greased casserole with alternate layers of celery, crumbs and parsley. Add salt and slightly beaten eggs to the meat or veggie stock. Mix thoroughly and pour over the turkey. Dot with butter. Bake at 350 degrees for 1 hour.
